Continuing, the route becomes more adventurous, winding along the mountain trails of the Madonie. Here, Sicily’s wild nature reveals itself in all its beauty, with the chance to spot wildlife. We arrive in Castelbuono — a fascinating medieval village at the foot of the Madonie. This town is renowned for the Castello dei Ventimiglia — an architectural gem from the 1300s — and for the slow-food tradition linked to manna, a typical Sicilian product. Castelbuono is also a model of environmental sustainability, known for the use of donkeys in waste collection.
